Trader Joe’s Vegetable Panang Curry

trader-joesTrader Joe’s Vegetable Panang Curry is just that – some jasmine rice (microwavable jasmine rice might be Trader Joe’s most impressive microwavable product) and some vegetable curry. The portion is fine for one person and the curry sauce is pretty damn good, and considering it’s cooked in the damn microwave and has a low price tag, it’s probably worthy of being called great.  If you’re in the market for a curry that’s microwavable, has a decent amount of spice and is vegan, this is worth a try.

One word of caution – I find that Trader Joe’s time estimates are a bit too high.  (I’ve tested two microwaves.)  This time, it’s a split bag for me.  The rice cooked fine at the low end of the recommended spectrum, but the curry wasn’t done yet.  I took the rice out and dropped the curry back in the microwave a few more times until I got it unfrozen; stirring was necessary.  I recommend 30 second increments.
